Southern Italy is the cradle of Italian-American cuisine. Centuries ago, The New World gave the Italians the tomato and they returned the gift in spades.  Neapolitans began transforming the tomato from the Americas into scrumptious sauces which they paired with its soul mate, pasta. Naples gave the world pizza and spaghetti with tomato sauce. Others have tried, but often failed to duplicate the original. And so it is, back to where it all began. Here in Southern Italy, you can treat yourself to the best renditions of classic hearty southern Italian soups, all kinds of pasta, fresh seafood and vegetable dishes and voluptuous deserts all done with a truly subtle, elegant Neapolitan touch. Neapolitan dishes feature bold and vibrant flavors made from few ingredients, using the simplest techniques and are as nutritious as they are delightful to the palate. You will delight in popular vegetable dishes like stuffed peppers, numerous delicious eggplant recipes like parmigiana and garlicky greens: pasta dishes like linguine with clam sauce, baked ziti, a wide range of tomato sauces from red sauce, made with raw tomatoes marinated in olive oil and seasoned with salt and basil, to hefty, long-simmered ragu’ with the flavors of meat and red wine. Got a sweet tooth? Join the Sorrentine crowd!  The dolci of Southern Italy include a delight for a mouth full of “sweet teeth.”
